Microwave Chicken A La King
- 1/4 c. butter or margarine
- 2 Tbsp. finely chopped green pepper
- 1/4 c. all-purpose flour
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 c. chicken broth
- 1 c. milk
- 2 c. cut up cooked chicken
- 1/2 c. frozen green peas
- 1 (2 oz.) jar sliced pimiento, drained
- 2 Tbsp. sherry (optional)
- toast, hot cooked noodles or rice
- In a 2-quart casserole, combine butter and green pepper. Microwave on High for 3 to 4 minutes or until green pepper is tender.
- Blend in flour, salt and pepper. Gradually stir in broth and milk.
- Microwave on Medium-high (170u0b0) for 6 to 7 minutes or until sauce thickens, stirring 2 or 3 times.
- Stir in chicken, peas, pimiento and sherry.
- Microwave on Medium-high for 6 to 7 minutes or until heated through, stirring 2 times.
- Serve over toast, hot cooked noodles or rice.
