Chocolate Nut Muffins
- 1 1/2 c. chocolate chips
- 1/3 c. butter
- 1 1/2 c. all-purpose flour
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1 c. chopped nuts
- 2/3 c. sour cream
- 1/4 c. corn syrup
- 1 egg
- Preheat oven to 375u0b0.
- Combine over hot (not boiling) water the chocolate chips and butter.
- Stir until smooth; set aside.
- In large bowl, combine flour, baking soda and salt.
- Add nuts to coat well.
- Make well in center of flour mixture.
- In small bowl, combine chocolate mixture, sour cream, corn syrup and egg until blended.
- Add to dry ingredients; stir until just moistened. Spoon into paper lined muffin pans, filling each about 3/4 full. Bake at 375u0b0 for 15 to 18 minutes.
- Cool 5 minutes; remove from pans.
- Cool completely, or serve warm.
- Makes about 15 muffins.
