Chicken Quesadillas
- 10 flour tortillas (8 inch)
- 3 c shredded cheese (Monterey Jack, Colby, Cheddar)
- 1 green bell pepper, cut into thin strips
- 1 red or yellow pepper, cut into thin strips
- 1/4 c sliced jalapeno peppers
- 1 medium onion, diced
- 3 boneless chicken breasts, cooked
- sour cream
- salsa
- Shred meat from chicken breasts into strips.
- Place 5 tortillas on ungreased baking sheet.
- Sprinkle each with half of cheese mixture.
- Top with chicken strips, peppers and onions.
- Use jalapenos for desired spiciness.
- Top with additional cheese and top with another tortilla.
- Bake at 350 degrees for 15-18 minutes or until crisp and heated through.
- Cut into wedges and serve with sour cream and salsa.
- Serves 6-8 as appetizer.
