Chocolate Nut Bread
- 3 oz. unsweetened chocolate
- 8 Tbsp. butter, softened
- 3 c. flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. salt
- 1 c. sugar
- 2 eggs, slightly beaten
- 1 c. milk
- 2 tsp. vanilla extract
- 1/2 c. chopped nuts
- Preheat the oven to 350u0b0.
- Grease and flour two 8 1/2 x 4 1/2 x 2 1/2-inch loaf pans.
- Melt the chocolate and butter in a small pan over low heat; set aside to cool.
- Stir and toss together the flour, baking powder, baking soda and salt.
- Place the sugar, eggs, milk, vanilla and nuts in a large mixing bowl and beat them together until blended.
- Add the combined dry ingredients and the chocolate mixture and beat just until the batter is smooth.
- Divide the batter evenly between the prepared pans and bake for about 45 minutes, or until a broom straw inserted in the center of a loaf comes out clean.
- Remove from the oven and let cool in the pans for about 5 minutes, then turn out onto a rack to cool completely.
