Stuffed Pasta Shells(6 To 8 Servings)
- 24 jumbo mac shells
- 1 (32 oz.) jar spaghetti sauce
- 1 (10 oz.) pkg. frozen chopped spinach, thawed and drained
- 2 c. Ricotta cheese
- 2 c. (8 oz.) shredded Mozzarella cheese
- 1 small onion, diced
- 1 egg
- 1/2 c. Parmesan cheese
- 1 Tbsp. parsley
- 1 tsp. dried oregano
- Parmesan cheese (to sprinkle over top)
- Cook shells per directions; drain and set aside. Lightly cover bottom of 9 x 13 baking pan (dish) with spaghetti sauce. Set remaining aside. Combine next 8 ingredients. Mix well and stuff shells with 2 tablespoons cheese mixture. Arrange in dish. Spoon rest of sauce over shells. Sprinkle with Parmesan cheese. Cover; bake at 350u0b0 for 30 to 40 minutes. (Goes well with fresh tossed salad, crusty garlic bread and cold sweet iced tea.) Enjoy.
