Chicken Okra Gumbo

  1. Base chicken with mixture of 1/4 cup flour, pepper and salt (optional).
  2. In a heavy skillet, fry chicken in margarine until brown; set aside.
  3. Fry okra, tomato and onion in the same pan with the margarine used to cook the chicken.
  4. Set vegetables aside and reserve 2 tablespoons of fat from pan.
  5. In about a 6-quart kettle, add 1/4 flour to the reserved cooking fat, stirring constantly over low heat until light brown, not burnt.
  6. Add water, pepper and vegetables.
  7. Stir a few minutes.
  8. Add fried chicken.
  9. Cook for about 1 hour or until chicken is tender and coming apart.
