Apricot Cake

  1. Mix together oil and sugar on low speed of electric mixer. Add eggs and sift in all dry ingredients.
  2. Mixture will become very stiff.
  3. Beat in apricot baby food.
  4. Stir in by hand chopped nuts.
  5. Pour into greased Bundt pan. Bake at 350u0b0 for 1 hour and 10 minutes.
  6. Bake until splits in top are done.
  7. Test for doneness by sticking toothpick in center of splits until it comes out clean.
  8. Top will be a little shiny and crusty.
  9. Serve plain by itself or good with ice cream, fruit or pudding. Makes an excellent birthday cake.
  10. Keeps moist a long time in a closed cake container.
