Apricot Cake
- 1 c. vegetable oil
- 2 c. granulated sugar
- 3 eggs, beaten
- 1 tsp. nutmeg
- 1 tsp. cinnamon
- 1 tsp. soda
- 1/4 tsp. salt
- 2 c. Pillsbury all-purpose enriched flour
- 1 c. chopped pecans
- 1 jar (7 3/4 oz.) junior size Gerber apricot baby food
- Mix together oil and sugar on low speed of electric mixer. Add eggs and sift in all dry ingredients.
- Mixture will become very stiff.
- Beat in apricot baby food.
- Stir in by hand chopped nuts.
- Pour into greased Bundt pan. Bake at 350u0b0 for 1 hour and 10 minutes.
- Bake until splits in top are done.
- Test for doneness by sticking toothpick in center of splits until it comes out clean.
- Top will be a little shiny and crusty.
- Serve plain by itself or good with ice cream, fruit or pudding. Makes an excellent birthday cake.
- Keeps moist a long time in a closed cake container.
