Frosted Fruit Salad Mold
- 3 oz. lime jello
- 1 c. boiling water
- 12 oz. 7-Up
- 8 3/4 oz. can crushed pineapple, drained
- 1 banana, sliced
- 1/4 c. sugar
- 1 Tbsp. flour
- 1 egg, slightly beaten
- 1/2 c. whipped cream
- 1/4 c. Cheddar cheese, shredded
- 2 Tbsp. Parmesan cheese, grated
- reserved pineapple juice
- Dissolve jello in boiling water and cool.
- Add pop.
- Chill until partially set.
- Fold pineapple and banana into jello.
- Put into an 8 x 8 x 2-inch pan.
- Chill until firm.
- Combine sugar and flour in saucepan.
- Stir in reserved pineapple liquid and egg. Cook and stir over low heat until thickened.
- Chill.
- Fold whipped cream into this mixture.
- Spread over jello.
- Sprinkle with cheeses.
- Refrigerate until topping is firm.
