Green Tomato Relish
- 1 peck green tomatoes, chopped
- 1 c. salt
- 1 1/2 large cabbage, chopped fine
- 6 green peppers, chopped
- 6 red peppers, chopped
- 9 onions, chopped
- 3 qt. vinegar
- 7 c. sugar
- 2 Tbsp. celery seed
- 2 Tbsp. mustard seed
- 1 stick cinnamon
- 1 Tbsp. whole cloves
- 1 Tbsp. turmeric
- Mix together green tomatoes, salt and cabbage.
- Let stand overnight.
- Drain well.
- Add to the tomato mixture green peppers, red peppers, onions, vinegar and sugar.
- Put the following spices in a cloth bag or a tea ball:
- celery seed, mustard seed, cinnamon, whole cloves and turmeric.
- Add spice bag to tomato mixture.
- Cook until done.
- Pour into hot jars.
- Seal.
- Makes 20 to 22 pints.
