Brunswick Stew
- 1 small hen or large fryer, cut into pieces
- 1 lb. fresh lean pork
- 1 lb. stew beef
- 1 can tomatoes
- 1 can corn, creamed or whole kernel
- 1 can lima beans or frozen may be used
- 4 medium potatoes, cut into pieces
- 1 medium onion, diced
- 1 bell pepper, diced
- 1 c. celery, diced
- 3 Tbsp. Worcestershire sauce
- 1/2 c. ketchup
- 1/2 lemon, sliced
- salt and pepper to taste
- Place chicken and meats into pot and cover with water; add salt and pepper.
- Cover and cook until very tender.
- Remove meat from bones and return to broth.
- Add all of the other ingredients and cook slowly
- until it is as thick as you like, usually about an hour.
- Stir occasionally to keep from sticking.
- More seasoning may be added, if desired.
