Spanakopita(Spinach Pie)
- 1 medium onion, chopped
- 2 green onions, sliced
- 2 Tbsp. salad oil
- 1 (10 oz.) pkg. frozen, chopped spinach, thawed
- 1 (12 oz.) container low-fat cottage cheese
- 1 (12 oz.) pkg. light cream cheese, softened
- 1/2 c. crumbled Feta cheese (2 oz.)
- 1/2 Tbsp. minced dill weed (fresh or dried)
- 1/4 tsp. black pepper
- 1 (16 oz.) pack fresh or frozen phyllo dough, thawed
- 1 large egg
- 1/2 c. butter or margarine, melted
- green onions for garnish
- In a 10-inch skillet over medium heat, saute onions in oil until tender.
- Drain all liquid from spinach and add to cooked onions in skillet.
- Add cottage cheese, cream cheese, Feta cheese, dill, pepper and egg and mix well.
- Remove half of phyllo sheets from package; keep the rest wrapped in plastic wrap or a wet tea towel to keep from drying out.
