Chip And Chili Pie(Good For Potluck)
- 1 Tbsp. butter or margarine, melted
- 1 1/4 c. chopped onions
- 1/4 c. chopped pimento
- 1 small can green chiles
- 1 Tbsp. green onions
- 5 c. Fritos (regular size) corn chips
- 1 (40 oz.) can Dennison's chili con carne with beans
- 2 1/4 c. shredded Monterey Jack cheese
- Preheat oven to 400u0b0.
- Grease a 2-quart baking dish.
- Saute onion in butter until transparent.
- Remove from heat.
- Stir in pimento, green chiles and green onion.
- Crush 4 cups of chips to make about 2 to 2 1/2 cups.
- Reserve 1 cup.
- Line bottom of baking dish with half the crushed chips.
- Carefully spread half the chili over chips.
- Layer half the cheese (pressing down slightly) and half the onion mixture.
- Repeat layers.
- Garnish with remaining corn chips.
- Bake 20 to 25 minutes.
- Serves 6 to 8.
