Peanut Butter Cup Cookies

  1. Heat oven to 350u0b0.
  2. In large mixing bowl, cream peanut butter, shortening, sugar and brown sugar.
  3. Add egg, milk and vanilla; beat well.
  4. Combine flour and baking soda; gradually add to creamed mixture, blending thoroughly.
  5. Shape dough into 1 1/2-inch balls; roll in sugar.
  6. Place on ungreased cookie sheets and bake 10 to 12 minutes.
  7. Remove from oven; immediately place unwrapped peanut butter cup on top of each cookie, pressing down so that cookie cracks around edges.
  8. Cool slightly; remove from cookie sheet onto wire rack.
  9. Cool completely.
  10. Makes about 2 1/2 dozen cookies.
