Cherry Cobbler
- 1 1/4 c. sugar
- 3 Tbsp. cornstarch
- 2 cans pitted red tart cherries
- 1/4 tsp. almond extract
- 3 Tbsp. shortening
- 1 c. flour
- 1 Tbsp. sugar
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 c. milk
- Mix sugar and cornstarch in saucepan.
- Stir in cherries and almond extract.
- Cook, stirring constantly, until mixture thickens and boils.
- Boil and stir 1 minute after mixture starts to thicken.
- Pour into a 2-quart casserole dish.
- Cut shortening into flour, sugar, baking powder and salt until mixture resembles fine crumbs.
- Stir in milk.
- Drop dough by 6 spoonfuls onto hot cherry mixture.
- Bake until dough is golden brown.
- Bake at 400u0b0 for approximately 25 to 30 minutes.
- Great with vanilla ice cream.
