Walnut Raisin Apple Cookies
- 1/4 c. butter or margarine, softened
- 1 c. packed brown sugar
- 2 eggs
- 1/4 c. apple juice
- 1/4 tsp. lemon extract
- 1 1/2 c. all-purpose flour
- 1 c. quick cooking oats
- 1 tsp. cinnamon
- 3/4 tsp. each baking soda and salt
- 1/4 tsp. nutmeg
- 1/8 tsp. ground cloves
- 1 c. raisins
- 1 1/2 c. peeled tart apples, chopped
- 1/2 c. chopped walnuts
- In a mixing bowl, cream butter and brown sugar until crumbly. Add eggs one at a time, beating well. Add apple juice and lemon extract. Combine the flour, soda, salt, oats, cinnamon, nutmeg and cloves. Gradually add to the creamed mixture. Stir in the apples, raisins and nuts. Drop by rounded tablespoon onto ungreased baking sheet 2-inches apart. Bake in 350u0b0 oven for 11 to 13 minutes or until lightly browned.
