Baked Chicken Divan
- 2 lb. broccoli
- 8 chicken breast halves, boned and skinned
- 2 to 4 Tbsp. oleo
- 1 (10 3/4 oz.) can condensed cream of chicken soup
- 1 c. regular or light mayonnaise
- 1/2 c. milk
- 1 Tbsp. Dijon mustard
- 1/2 tsp. pepper
- 6 oz. shredded Swiss cheese (about 1 1/2 c.)
- 1/3 c. plain bread crumbs
- 2 Tbsp. oleo, melted
- 1/4 tsp. paprika
- Cook broccoli and drain.
- In a large skillet, cook chicken in 2 tablespoons oleo about 5 minutes on each side, or until tender (can use more oleo).
- Preheat oven to 350u0b0.
- Arrange broccoli and chicken in a shallow 2 1/2 or 3-quart baking dish.
- In a medium bowl, stir soup, mayonnaise, milk, mustard and pepper until blended.
- Stir in cheese.
- Spoon over chicken and broccoli.
- Cover and bake for 30 minutes.
- In a small bowl, mix bread crumbs, melted oleo and paprika.
- Uncover chicken; sprinkle with crumbs mixture.
- Bake, uncovered, for 15 minutes, or until hot and bubbly.
