Chicken With Vegetables, Chinese Style
- 3 large chicken half breasts, boned, skinned and cut in 2 1/2 x 1/2-inch strips
- 1 tsp. powdered ginger
- 1/4 tsp. paprika
- 3/4 tsp. salt
- 2 Tbsp. oil
- 1 1/2 c. diagonally cut celery, cut 1/4-inch thick
- 1/2 c. each: green pepper strips and coarsely chopped onion
- 1 can tomato wedges
- 1/2 c. Rose wine
- 2 Tbsp. soy sauce
- 1 Tbsp. each: cornstarch and water
- Toss the first 4 ingredients in oil and saute for 5 minutes. Push chicken to one side of the pan and add the celery, pepper and onion.
- Stir and fry for 5 minutes and then add tomato, wine and soy sauce.
- Heat to simmering.
- Turn heat low, cover and cook for 5 minutes.
- Then blend cornstarch and water and stir into chicken mixture.
- Stir constantly until sauce bubbles.
- Serve at once over crisp bean sprouts, rice or noodles.
