Huevos Rancheros(For 2 To 3)
- 4 slices bacon, cut into 1-inch strips
- 1 Tbsp. oil
- 1 small onion, sliced
- 3 jalapenos, chopped *
- 1 green pepper (optional)
- 1/2 c. tomato sauce
- 1/2 c. chopped tomatoes (1 medium)
- 1 clove crushed garlic
- 1 tsp. chili powder
- 1/4 tsp. salt
- eggs
- buttered tortillas
- grated Parmesan or yellow cheese
- Fry bacon.
- Drain and pour off fat.
- Saute onion, jalapenos and green pepper in oil.
- Add tomato sauce, tomatoes, garlic, chili powder and salt.
- Simmer 15 minutes.
- Thin as necessary with tomato juice or water.
- Break eggs into sauce.
- Simmer, covered until done.
- Serve on warm buttered tortillas.
- Top with grated cheese and bacon.
