Los Angeles Bicycle Shop Cafe Garlic Chicken
- 3 oz. peanut oil
- 3 oz. butter
- 6 cloves garlic, peeled and chopped
- salt
- white pepper
- 1 (2 1/2 lb.) roasting chicken
- Marinate garlic a few minutes with additional 3 ounces peanut oil.
- Put salt and pepper generously on inside and outside of chicken.
- With basting brush, apply chopped garlic on inside and outside of chicken.
- Heat butter and oil in thick, large pan.
- Put in chicken and golden brown it on every side.
- Put in the oven for 45 minutes to 1 hour.
- Turn chicken around and baste every 15 minutes.
- Once cooked, remove chicken from pan, throw fat away and unglue the juices from the pan with a wooden spoon.
- Add about 6 ounces of water.
- Boil for 3 minutes or so, to reduce to the right consistency.
- Strain juices.
- Cut chicken in half and pour the sauce on top.
