Spice 'N Crumb Banana Bars
- 2 c. flour
- 1 1/2 c. sugar
- 3/4 c. firmly packed brown sugar
- 1/2 c. butter, softened
- 1 c. (2 small) bananas, thinly sliced
- 3/4 c. coconut
- 1 tsp. salt
- 1 tsp. soda
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 tsp. mace (optional)
- 1/2 c. sour cream
- 1 egg
- Heat oven to 350u0b0 (325u0b0 for glass).
- Lightly spoon flour into measuring cup; level off.
- In large mixer bowl, combine first 4 ingredients; mix at low speed until crumbly.
- Press 1 1/2 cups crumb mixture into ungreased 13 x 9-inch pan.
- Reserve 1/2 cup crumb mixture for topping.
- To remaining crumb mixture, add remaining ingredients; beat 1 minute at medium speed until well blended.
- Spread over crumb crust.
- Sprinkle with reserved crumbs. Bake 30 to 40 minutes until golden brown.
- Cool; cut into bars. Makes 3 to 4 dozen.
