Plum Glazed Chicken

  1. Rinse chicken; dry well.
  2. Sprinkle generously with salt to season.
  3. Heat oil and butter together in a large skillet; add chicken and brown quickly on all sides.
  4. Arrange in shallow baking dish.
  5. Spoon glaze over chicken.
  6. Bake at 375u0b0F, basting with glaze in pan, about 45 minutes.
  7. Gingered Plum Glaze: Slowly heat plum jam until it melts.
  8. Stir in catsup, lemon peel, lemon juice, vinegar, ginger, hot pepper seasoning, anise seed, dry mustard, cinnamon and cloves.
