Chili
- 2 1/2 lb. ground beef round
- 2 c. chopped onion
- 1 green pepper, coarsely chopped
- 3 cloves garlic, pressed
- 1 or 2 Tbsp. crushed hot red pepper
- 3 Tbsp. chili powder
- 2 tsp. ground cumin
- 1/2 tsp. dried oregano leaves
- 2 1/2 tsp. salt
- 2 (1 lb.) cans pinto beans (undrained)
- 2 (1 lb.) cans whole tomatoes (undrained)
- 1 (12 oz.) can whole kernel corn
- 1 (8 oz.) can tomato sauce
- In large heavy
- skillet, over medium heat, saute ground beef, stirring occasionally, until red color disappears.
- Pour off fat. Add onion, green pepper, garlic, crushed red pepper, chili powder,
- cumin,
- oregano
- and
- salt;
- mix
- well.
- Cook, stirring, until onion and green pepper are tender.
- Add beans, tomatoes, corn and tomato sauce; stir to mix well, breaking up tomatoes with
- fork.
- Simmer
- slowly,
- covered
- and
- stirring occasionally, until
- thickened
- and flavors are blended, about 45 minutes.
