Gloria'S New Orleans Red Beans
- 1 ham bone
- 1 lb. red beans
- 1 medium onion, chopped
- 5 large pods garlic
- 1 medium green pepper, chopped
- 1 c. chopped celery, no leaves
- 1 large bay leaf
- Louisiana hot sauce
- 1 bunch chopped green onions
- 1/2 c. red wine (optional)
- Sort out red beans and wash.
- Cover beans with water.
- Add onions, garlic, green pepper, celery and wine.
- Soak overnight.
- In morning, add ham bone and bay leaf and few dashes of Louisiana hot sauce.
- Cook until beans are tender.
- More water may be added. Cook, simmering uncovered, but watch closely.
- Mash a few beans to thicken.
- When done, serve over rice and sprinkle with chopped green onions.
- Salt and pepper to taste while cooking.
