Gloria'S New Orleans Red Beans

  1. Sort out red beans and wash.
  2. Cover beans with water.
  3. Add onions, garlic, green pepper, celery and wine.
  4. Soak overnight.
  5. In morning, add ham bone and bay leaf and few dashes of Louisiana hot sauce.
  6. Cook until beans are tender.
  7. More water may be added. Cook, simmering uncovered, but watch closely.
  8. Mash a few beans to thicken.
  9. When done, serve over rice and sprinkle with chopped green onions.
  10. Salt and pepper to taste while cooking.
