Salmon Burgers
- 1 (15 oz.) can pink salmon, drained (reserve liquid)
- 1 egg, beaten
- 1/2 c. saltine cracker crumbs
- 1/4 c. finely chopped onion
- 1/4 c. finely chopped celery
- 1/2 tsp. baking powder
- vegetable cooking spray
- 1/2 c. fat-free mayonnaise
- 2 Tbsp. lemon juice
- 1/2 tsp. dried dill weed
- 1/4 tsp. pepper
- 1/4 tsp. hot sauce
- 6 onion sandwich rolls
- 6 tomatoes, sliced
- 1 c. shredded lettuce
- Flake salmon with a fork; combine with the next 5 ingredients. Add 1 to 2 tablespoons reserved liquid, stirring until mixture sticks together.
- Shape into 6 patties and cook over medium heat in a sprayed skillet approximately 4 minutes on each side.
