Filled Puff Shells

  1. In saucepan, bring beer to a boil.
  2. Reduce heat.
  3. Add butter and stir until melted.
  4. With a wooden spoon, stir in flour and salt all at once.
  5. Cook, stirring, until mixture forms into a ball and leaves sides of pan.
  6. Remove from heat.
  7. Add eggs, one at a time, beating well after each addition until smooth.
  8. Stir in cheese, if used.
  9. Drop by teaspoonfuls onto buttered baking sheet, swirling top of each (allow room for expansion).
  10. Bake at 450u0b0 for 10 minutes.
  11. Reduce heat to 350u0b0.
  12. Bake 10 minutes more or until lightly browned.
  13. Cool on racks.
  14. Split and fill puffs with your favorite egg, ham, tuna or chicken salad.
  15. Makes 24 puffs.
