15 Bean Soup

  1. Wash bean mix thoroughly; place in pot and cover with water and 2 tablespoons salt.
  2. Soak overnight.
  3. In the morning, drain and add 2 quarts water.
  4. Add ham, ham hock or sausage.
  5. Bring to boil.
  6. Simmer slowly for 2 1/2 hours.
  7. Add onion, tomatoes, chili powder, lemon juice, garlic and salt and pepper.
  8. Simmer slowly 30 minutes.
  9. A can of stewed tomatoes can be added instead of regular tomatoes (adds a special taste).
  10. Serve with salad and crackers or corn bread.
  11. Better the second day!
