15 Bean Soup
- 1 pkg. bean mix
- 2 Tbsp. salt
- 2 qt. water
- ham, ham hock or ring of smoked sausage, chopped
- 1 large chopped onion
- 1 large can tomatoes
- 1 tsp. chili powder
- 1 Tbsp. lemon juice
- 1 clove minced garlic
- salt and pepper to taste
- Wash bean mix thoroughly; place in pot and cover with water and 2 tablespoons salt.
- Soak overnight.
- In the morning, drain and add 2 quarts water.
- Add ham, ham hock or sausage.
- Bring to boil.
- Simmer slowly for 2 1/2 hours.
- Add onion, tomatoes, chili powder, lemon juice, garlic and salt and pepper.
- Simmer slowly 30 minutes.
- A can of stewed tomatoes can be added instead of regular tomatoes (adds a special taste).
- Serve with salad and crackers or corn bread.
- Better the second day!
