Southwest Quinoa Salad
- 2 cups quinoa, uncooked
- 1/2 tablespoon vegetable stock base
- 1 (12 ounce) can black beans, rinsed
- 1 red pepper, chopped
- 1 cup jalapeno, from a jar, chopped
- 1 bunch fresh cilantro, chopped
- 1 medium white onion, chopped
- 1 (10 ounce) bag frozen corn
- 1/4 cup lime juice
- 1 dash apple cider vinegar
- 1 dash lemon juice
- cook quinoa as directed on package with 4 C water and the vegetable base.
- while the quinoa is cooking, combine the black beans, red pepper, jalapenos, cilantro, and onion in a bowl.
- When the quinoa is done cooking add the frozen corn to it and stir. let cool a bit.
- combine the quinoa mix and the veggies, add the remaining ingredients, stir and serve. Can also be refrigerated for later.
