Gourmet Beef Stew
- 6 Tbsp. shortening
- 2 medium onions
- 2 bouillon cubes
- 2 Tbsp. chopped parsley
- 1/4 tsp. thyme
- 3 lb. cubed beef
- 1 c. red wine
- 1 clove garlic
- 1 bay leaf
- 1 Tbsp. salt
- 3 medium potatoes, cubed
- 2 turnips, cubed
- 4 to 5 carrots, sliced
- 1 (8 oz.) can tomatoes
- olive oil
- pepper
- Brown meat in shortening.
- Remove and set aside.
- Add a little olive oil and butter and saute onions.
- (You may need to remove some of juice.)
- Put meat and juice back into pan.
- Add 4 cups water, wine, bouillon cubes, garlic, parsley, bay leaf, thyme, salt and pepper.
- Cover and simmer 1 1/2 hours.
- Prepare and add veggies and cook until tender.
- Twenty minutes before end of cooking time, add tomatoes.
