Carol'S Chili
- 6 slices bacon
- 1 1/2 lb. Eckrich kielbasa sausage, cut in slices, then cut in half
- 1 1/2 lb. lean ground beef
- 1 large onion, cut in chunks
- 1 bell pepper, cut in chunks
- 1/2 jalapeno pepper, diced
- 2 cloves garlic, minced
- 2 c. dark red wine
- 1/2 c. Worcestershire sauce
- 1 tsp. mustard
- 1 tsp. celery seed
- 1 1/2 tsp. chili powder
- 1/2 tsp. salt
- 1 1/2 tsp. pepper
- 6 c. Italian tomatoes
- 1 (15 oz.) can pinto beans
- 1 (15 oz.) can kidney beans
- 1 (15 oz.) can garbanzo beans
- Brown bacon and sausage.
- Set aside.
- Brown beef and drain. Cook onion, pepper, garlic and jalapeno pepper over low heat for 2 to 3 minutes.
- Stir in wine and Worcestershire sauce.
- Simmer 10 minutes.
- Mash tomatoes.
- Add tomatoes and juice and all meats to onion mixture.
- Heat to boiling.
- Reduce heat and simmer 1/2 hour, covered.
- Stir in all beans.
- Cover and simmer 1 hour, stirring occasionally.
- Serves 15.
