Nutty Peach Squares
- 1/2 c. margarine, softened
- 1/2 c. sugar
- 2 eggs
- 1/2 c. all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 2 tsp. ground cinnamon
- 54 vanilla wafers, finely rolled
- 1/4 c. milk
- 1 1/2 c. peach slices (fresh or canned), drained
- 1/2 c. walnuts, chopped
- confectioners sugar
- whipped topping
- In a large bowl, beat margarine and sugar at medium speed until creamy.
- Add eggs, one at a time, beating well after each addition.
- Sift together the flour, baking powder, salt and cinnamon; stir in vanilla wafer crumbs.
- Stir crumb mixture with milk into margarine mixture until well blended.
- Stir in peaches and walnuts.
- Spread into well-greased and floured 13 x 9-inch pan.
- Bake at 350u0b0 for 35 minutes or until done.
- Sprinkle with confectioners sugar.
- Serve warm or at room temperature.
- Top squares with peach slices and a dollop of whipped topping.
