Red Cinnamon Cucumber Pickle

  1. Drain liquor from oysters and reserve.
  2. Pick over oysters for any bits of shell and grit.
  3. Melt butter in a heavy 3 to 4-quart saucepan.
  4. Add onions and saute until soft, about 3 minutes.
  5. Add flour, stirring constantly until blended.
  6. Gradually add milk and cream, stirring over low heat until mixture comes to a boil.
  7. Stir in salt and cayenne pepper.
  8. Add oysters and liquor and simmer over low heat, until the oysters just begin to curl at the edges, about 4 to 5 minutes.
  9. Ladle hot stew into bowls and garnish with chopped parsley.
  10. Serves 4.
