Red Cinnamon Cucumber Pickle
- 8 or 9 large cucumbers
- 2 c. lime
- 1 Tbsp. alum
- salt
- 10 c. sugar
- 3 1/2 c. vinegar
- 1 bottle red or green food coloring
- 12 or 14 oz. red hot cinnamon candies
- 4 cinnamon sticks
- 2 pt. oysters
- 2 Tbsp. butter
- 1/4 c. finely chopped green onion tops
- 2 Tbsp. flour
- 3 c. milk
- 1 c. heavy cream
- 1/2 tsp. salt
- 1/8 tsp. cayenne pepper
- parsley, chopped
- Drain liquor from oysters and reserve.
- Pick over oysters for any bits of shell and grit.
- Melt butter in a heavy 3 to 4-quart saucepan.
- Add onions and saute until soft, about 3 minutes.
- Add flour, stirring constantly until blended.
- Gradually add milk and cream, stirring over low heat until mixture comes to a boil.
- Stir in salt and cayenne pepper.
- Add oysters and liquor and simmer over low heat, until the oysters just begin to curl at the edges, about 4 to 5 minutes.
- Ladle hot stew into bowls and garnish with chopped parsley.
- Serves 4.
