Spinach Stromboli
- 10 oz. pkg. frozen spinach, cooked and drained well
- 1 to 2 c. Mozzarella cheese, shredded
- 6 to 8 sun-dried tomatoes, coarsely chopped
- 3/4 c. grated Parmesan cheese
- 4 scallions, chopped
- a little salt and pepper
- 10 oz. pkg. pizza dough (Pillsbury)
- Combine everything but pizza dough.
- Pat out pizza dough on wax paper to a rectangle. Spread mixture evenly on dough, leaving 1-inch space around edges. Fold over all 4 sides the 1-inch. Beginning with end facing you, roll up, jelly roll style. Transfer the roll, seam side down, to a cookie sheet with Pam.
- Lightly spread olive oil on top.
- Prick through with meat fork a couple of times. Bake at 400u0b0 for 20 minutes or until golden brown. Cool slightly before slicing.
- Impressive to serve, but easy to make!
