Spinach Quiche
- 3/4 c. shredded sharp Cheddar cheese
- 3/4 c. shredded Monterey Jack cheese
- 4 slices bacon
- 6 oz. lean sausage
- 1/4 c. diced onion
- 5-6 mushrooms, sliced
- 1 pkg. (8-10 oz.) fresh spinach or 1 pkg frozen spinach
- 1 Tbsp. flour
- 4 eggs
- 1/2 c. milk
- salt, pepper, nutmeg to taste
- 1 Pillsbury refrigerated pie crust
- Saute sausage and drain on paper towel.
- Saute bacon, drain and crumble.
- Saute mushrooms and onion.
- Microwave spinach on high 4 to 6 minutes, drain well and chop.
- Add 1 Tbsp. flour.
- Mix all ingredients in large bowl.
- Pour into pie crust.
- Bake at 400u0b0 for 15 minutes.
- Reduce heat to 350u0b0 and bake additional 15 minutes.
- Yield:
- 6 servings.
