Banana Squares

  1. In a small mixing bowl, beat egg whites until soft peaks form; set aside.
  2. In a large mixing bowl, cream shortening and sugar. Beat in egg yolks; mix well.
  3. Add bananas.
  4. Combine flour and baking soda.
  5. Add to creamed mixture alternating with milk, beating well after each addition.
  6. Add vanilla; fold in egg whites.
  7. Fold in nuts if desired.
  8. Pour into greased 9 x 13-inch baking pan. Bake at 350u0b0 for 40 to 50 minutes.
  9. Cool on wire rack.
  10. If desired, garnish with whipped cream or banana slices.
  11. Yield:
  12. 12 to 16 servings.
