Firehouse Chili
- 1 1/2 lb. ground beef
- 1 large onion, chopped
- 4 strips bacon, chopped
- 2 (4 oz.) cans sliced mushrooms
- 1 can tomatoes, cut up
- 1 (8 oz.) can tomato juice
- 1 pkg. chili seasoning
- 1/4 c. parsley flakes
- 1 (6 oz.) can tomato paste
- 1/4 c. chopped chives
- 1 Tbsp. oregano
- 4 cans kidney beans
- salt and pepper
- In large pot brown ground beef.
- In small frying pan, cook onions and bacon until onions are transparent.
- Combine with ground beef.
- Add remaining ingredients, being sure to add tomato juice last.
- Cover and simmer on low for 1 1/2 hours.
- Stir frequently.
- Serve topped with grated Cheddar and chopped onion. Serve with crackers or cornbread.
