German Apple Cake
- 3 c. flour
- 1 tsp. baking powder
- 1 tsp. salt
- 4 eggs
- 2 c. sugar
- 1 c. vegetable oil
- 1/2 c. orange juice
- 2 1/2 tsp. vanilla
- 4 c. thinly sliced, peeled apples
- 2 tsp. cinnamon
- 3 Tbsp. sugar
- Combine the first 3 ingredients; set aside.
- In a large mixing bowl beat eggs and 2 cups sugar.
- Combine oil and orange juice; add alternately with dry ingredients, to egg and sugar mixture.
- Mix well.
- Add vanilla.
- Pour half the batter in greased and floured tube pan.
- Arrange half the apples over the batter.
- Sprinkle half the cinnamon and 3 tablespoons sugar mixture over top.
- Add remaining batter; top with apples and cinnamon-sugar mixture.
- Bake at 350u0b0 for 1 hour and 10 minutes.
- Let cake cool 1 hour in pan; remove from pan, apple side up.
- Cool to cut.
