Sweet And Sour Pork
- 1 (18 oz.) can pineapple chunks (reserve juice)
- 2 Tbsp. oil
- 1 clove garlic, squeezed
- 1 green pepper
- 1/2 red sweet or yellow pepper (optional)
- 1 sweet onion, wedged
- 1 lb. boneless pork, cut into pieces
- 2 Tbsp. cornstarch
- 1/4 c. cider vinegar
- 1/2 c. Karo corn syrup
- 3 Tbsp. soy sauce
- 1 Tbsp. catsup
- Heat oil in skillet until hot, over medium-high heat.
- Add peppers, onions and garlic; stir-fry 2 minutes.
- Remove to a bowl. Stir-fry pork until cooked through.
- Mix pineapple juice (minus 1/4 cup) and last 5 ingredients.
- Stir into skillet.
- Add veggies and pineapple; bring to a boil cooking 1 minute until thick. Serve over rice (4 to 6 servings).
