Microwave Poached Salmon
- 2 c. water
- 1 medium stalk celery, cut into chunks
- 1/2 medium lemon, sliced thin
- 1/2 medium onion, sliced thin
- 3 Tbsp. vinegar
- 2 Tbsp. lemon juice
- 1 1/2 tsp. salt
- 6 whole cloves or more
- 1 bay leaf or more
- 4 salmon, swordfish, halibut or other fish steaks, (6 to 8 oz. each)
- parsley sprigs
- extra lemon
- Combine all
- ingredients
- except
- fish and garnishes in 2-quart microprooftasserole.
- Cover
- andtlace in microwave oven.
- Cook on
- High 7 minutes.
- Put in fish.
- Cook 5 minutes. Turn fish over
- carefully
- and
- cook 3 to 5 minutes more.
- Let stand 5 minutes before removing lid.
- Serve with lots of lemon or lime, hot or chilled.
- Garnish with parsley.
