Spicy Southwest Baked Beans
- 1 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1 jalapeno pepper, chopped
- 2 garlic cloves, chopped
- 1 tablespoon olive oil
- 2 (15 ounce) cans pinto beans, rinsed and drained
- 1/2 cup beer
- 1/4 cup sliced sun-dried tomato, softened
- 1/4 cup light brown sugar, packed
- 1 teaspoon cumin
- 1/2 teaspoon dried thyme leaves
- 1 bay leaf
- 1/2 teaspoon salt
- Saute onion, bell pepper, chili and garlic in oil in large skillet until tender, about 8 minutes.
- Combine onion mixture and remaining ingredients in 1 1/2 quart casserole.
- Bake at 350 degrees, covered, 30 minutes.
- Uncover and bake 15-20 minutes or until liquid is nearly absorbed.
- Discard bay leaf.
