Turkey Sausage, Vegetable, Pasta Ragout Casserole
- 2 lb. turkey sausage
- 2 Tbsp. olive oil
- 2 c. sliced celery, cut on diagonal in 1/2-inch pieces
- 2 c. coarsely chopped yellow onions
- 1 c. coarsely chopped green bell pepper
- 1 c. coarsely chopped yellow or red bell pepper
- 2 Tbsp. coarsely chopped garlic
- 1 lb. ripe plum tomatoes (each 1 cut into 8 pieces)
- 1 1/2 c. prepared Marinara tomato sauce (I use "Classico" brand)
- 1/2 c. dry white wine
- 2 tsp. dried basil
- 1 tsp. fennel seed
- salt and freshly ground pepper to taste
- 1/4 c. chopped fresh parsley
- cooked rigatoni or mostaccioli pasta
- 1 1/2 c. shredded Monterey Jack cheese or Mozzarella cheese
- Parmesan cheese (coarsely grated kind)
- Preheat broiler.
- Score the sausages 1/4-inch deep 3 times on each side.
- Broil sausages about 4 inches from heat source until golden brown, 4 to 5 minutes per side.
- Remove from broiler and cut into 1 inch lengths.
- Reserve.
