Zucchini Quiche
- 1 (9-inch) pie shell
- 1 lb. zucchini
- 1 Tbsp. margarine
- 1 tsp. salt
- 1/8 tsp. pepper
- 1/4 tsp. oregano
- 2 c. sour cream
- 2 large eggs
- 1/2 tsp. baking powder
- 3/4 c. shredded Cheddar cheese
- 1/4 c. Parmesan cheese, grated
- Italian bread crumbs
- 1 1/2 Tbsp. chives, dried
- Bake crust about 3 minutes.
- Cut zucchini into slices.
- Saute in margarine with chives, salt, pepper and oregano.
- Combine sour cream, eggs and baking powder; mix well.
- Combine zucchini mixture and cheese.
- Place in partially cooked pie shell.
- Top with Parmesan cheese and sprinkle generously with bread crumbs.
- Bake at 325u0b0 for 40 to 45 minutes.
