Country Fried Steak
- 2 lb. round steak
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 c. all-purpose flour
- 1 Tbsp. vegetable oil
- 1 onion, chopped
- 1 c. chicken stock or water
- 1 c. buttermilk
- 1 c. shredded cheese
- Divide steak into serving pieces.
- Pound with a kitchen mallet or rim of saucer until thin.
- Sprinkle with salt and pepper.
- Dust with flour.
- In a skillet, heat oil and sear meat until evenly browned on all sides.
- Add onion and cook several minutes until limp.
- Combine chicken stock and buttermilk and pour over meat. Stir to loosen up crust from the bottom of the skillet.
- Cover and cook over medium-low heat until meat is tender, 45 to 50 minutes. Add cheese and stir into gravy.
- This is delicious over rice or biscuits.
- Makes 6 to 8 servings.
