Chicken Oriental
- 3 chicken breasts
- 1/4 c. salad oil
- 2 c. sliced celery
- 1 sliced green pepper
- 5 green onions, sliced
- chicken broth
- 2 Tbsp. soy sauce
- dash of pepper
- 2 Tbsp. cornstarch
- 1/4 c. water
- 1 tsp. salt (optional)
- 1 tsp. sugar (optional)
- rice
- Remove skin and bones from chicken (make broth from these items).
- Slice meat in short, narrow strips.
- Slice vegetables. Saute chicken in oil until meat is lightly browned.
- Add to chicken the vegetables and fry a few minutes, until vegetables are wilted.
- Mix broth, soy sauce, sugar, salt and pepper; pour over mixture.
- Cover and steam 5 minutes.
- Dissolve cornstarch in water; add to broth and stir until thickened.
- Serve over rice.
