Home Made Potato Soup
- 6 medium potatoes, peeled and cut into bite-size pieces
- 2 medium onions, chopped
- 1 carrot, pared and sliced
- 1 stalk celery, sliced
- 4 chicken bouillon cubes
- 1 Tbsp. parsley flakes
- 5 c. water
- 1 Tbsp. salt
- pepper
- 1/3 c. butter
- 1 (13 oz.) can evaporated milk
- chopped chives
- 1/2 to 1 tsp. chopped garlic
- 3 oz. olive oil
- 1 to 2 whole anchovies
- 1/2 tsp. red wine vinegar
- 1 tsp. Dijon mustard
- 1 1/2 tsp. Worcestershire sauce
- 3 to 4 drops Tabasco
- 2 egg yolks
- romaine lettuce
- juice of 1/2 lemon
- Parmesan cheese
- cracked black pepper
- croutons
- Rub garlic in bottom of 1 wooden bowl.
- Add olive oil and mix with garlic.
- Take anchovies, chop them into small pieces and rub them into the bottom of the bowl.
- Mix vinegar, mustard, Worcestershire sauce, Tabasco and egg yolks.
- Add lettuce and toss.
- Add lemon juice.
- Add Parmesan cheese and cracked black pepper to taste.
- Top with Parmesan cheese and croutons.
- Enjoy with a bottle of good white wine.
