Ham Wraparounds
- 12 stalks asparagus, cooked
- 2 Tbsp. butter or margarine
- 2 Tbsp. flour
- 1 c. milk
- 2 egg yolks
- 1/2 tsp. salt
- 1/2 tsp. dry mustard
- 4 slices boiled ham
- 1/4 c. grated cheese
- Cook fresh asparagus in 1-quart casserole dish in boiling salted water until tender, 9 to 10 minutes.
- (Canned asparagus may be used.)
- Melt butter in 1-quart casserole; stir in flour.
- Add milk; cook until thick.
- Stir every 30 seconds.
- Beat egg yolks and stir into flour and milk mixture.
- Add seasoning.
- Wrap 3 stalks of asparagus in each slice of ham.
- Lay bundles in glass utility dish and cover with sauce.
- Sprinkle with cheese.
- Cover and cook with microwave for 4 1/2 minutes.
- Serve on toast. Recipe yields 4 servings.
