Country Corn
- 1 (10 oz.) pkg. frozen whole kernel corn
- 1/2 c. chopped onion
- 1/2 c. chopped red and/or green bell pepper
- 2 Tbsp. margarine
- 1/2 tsp. paprika
- 1 tsp. salt
- 1 egg, slightly beaten
- 1 Tbsp. margarine
- 2 Tbsp. flour
- 1/4 tsp. dry mustard
- 3/4 c. milk
- 1/2 c. dry bread crumbs
- 1/2 c. grated Cheddar cheese
- Cook onion and bell pepper in 2 tablespoons margarine for about 5 minutes.
- Add flour, paprika, mustard, salt and milk. Heat until bubbly.
- Remove from heat and stir in corn and egg. Pour in a 1-quart casserole, mixing in the Cheddar cheese.
- Mix the bread crumbs in the 1 tablespoon margarine and place on top of corn mixture.
- Bake at 350u0b0 for 40 minutes.
