English Pear Pie
- 3 English muffins
- 29 oz. can pears
- 2 Tbsp. lemon juice
- 4 large eggs
- 1/3 c. sugar
- 1 1/2 c. milk
- 1 c. brown sugar
- 1/2 c. whipping cream
- 2 tsp. vanilla
- Cool Whip
- 3 oz. margarine
- Crumble English muffins and set aside.
- Drain and chop pears into small pieces and place in 9-inch or 10-inch pie plate sprayed with Pam.
- In processor or blender, mix lemon juice, eggs and sugar.
- Add milk and mix, then add English muffin crumbs.
- Pour over pears.
- Bake at 350u0b0 for 55 minutes to 1 hour.
- Cool and place on plate.
- In pan, melt margarine and add brown sugar and cream. Bring to boil 4 to 5 minutes.
- Turn fire off and add vanilla.
- To serve, spread Cool Whip on top and pour sauce over.
