Pink Chicken Salad
- 3 chicken breasts, cooked and chopped
- 1 stalk celery, chopped- about 3/4 cup
- 2 green onions, chopped
- 1/2 cup grapes, seedless, halved
- 3/4 cup cranberries, dried
- 3/4 cup salad dressing, such as Miracle Whip brand
- 2 tablespoons reduced-fat coleslaw dressing (Marzetti's is good)
- 1 teaspoon paprika
- 1 teaspoon seasoning salt
- fresh coarse ground black pepper, to taste
- Simply mix everything together well. Chill for at least one hour before serving. It tastes much better if allowed to chill overnight.
- Serve on toasted bread, croissants, or lettuce leaves. This easy chicken salad recipe also tastes great in pita pockets or hollowed tomato cups. Also try different breads such as Ciabatta or raisin bread.
