5 Pound Fruit Cake
- 1 c. butter
- 1 1/2 c. sugar
- 7 eggs
- 2 1/2 c. flour
- 1 tsp. vanilla flavor
- 1/2 tsp. lemon flavor
- 1/2 c. lemon juice
- 1 lb. candied cherries
- 1 lb. candied pineapple
- 1 1/4 lb. chopped pecans
- 1/2 c. flour to coat
- Chop candied fruit in small pieces; add to pecans.
- Set aside. Mix the first 7 items in a large mixing bowl.
- Mix by hand only and only until all items are wet.
- It's okay to have lumps.
- If you mix too much, you'll need a steak knife to cut the cake.
- Take the fruit and pecans and add the flour; coat the fruit well, then fold into cake mixture.
- Put mixture in 2 loaf pans and bake at 250u0b0 for 3 hours.
- Place a pan of water under the cakes while baking.
