5 Pound Fruit Cake

  1. Chop candied fruit in small pieces; add to pecans.
  2. Set aside. Mix the first 7 items in a large mixing bowl.
  3. Mix by hand only and only until all items are wet.
  4. It's okay to have lumps.
  5. If you mix too much, you'll need a steak knife to cut the cake.
  6. Take the fruit and pecans and add the flour; coat the fruit well, then fold into cake mixture.
  7. Put mixture in 2 loaf pans and bake at 250u0b0 for 3 hours.
  8. Place a pan of water under the cakes while baking.
