Pepper Steak

  1. Slice meat across grain in thin 1/4-inch strips.
  2. Season with pepper.
  3. Heat bacon drippings.
  4. Add meat and saute until brown on all sides.
  5. Add onions and saute 5 minutes.
  6. Add consomme.
  7. Bring to boil.
  8. Cover and simmer 3 minutes.
  9. Stir in mushrooms and green peppers.
  10. Simmer 5 minutes.
  11. Stir in tomatoes; simmer 2 minutes. Blend butter and flour to make paste.
  12. Stir into mixture in pan, a little at a time.
  13. Cook, stirring constantly, until mixture thickens.
  14. Place on preheated platter.
  15. Garnish with parsley. Serve with rice.
