Pepper Steak
- 2 lb. flank steak
- pepper
- 1 Tbsp. bacon drippings
- 2 onions, finely chopped
- 1 can (10 1/2 oz.) beef consomme
- 1/2 lb. mushrooms, sliced
- 3 green peppers, seeded and sliced into thin strips
- 3 tomatoes
- 3 Tbsp. butter
- 3 Tbsp. flour
- 1 tsp. parsley
- Slice meat across grain in thin 1/4-inch strips.
- Season with pepper.
- Heat bacon drippings.
- Add meat and saute until brown on all sides.
- Add onions and saute 5 minutes.
- Add consomme.
- Bring to boil.
- Cover and simmer 3 minutes.
- Stir in mushrooms and green peppers.
- Simmer 5 minutes.
- Stir in tomatoes; simmer 2 minutes. Blend butter and flour to make paste.
- Stir into mixture in pan, a little at a time.
- Cook, stirring constantly, until mixture thickens.
- Place on preheated platter.
- Garnish with parsley. Serve with rice.
